Instant Mango Pickle

Ingredients

  • 1 cup Mangoes
  • 3 tbsps Gingelly oil
  • 1 tsp Mustard seeds
  • 1/4 tsp Fenugreek powder
  • 1 sprig Curry leaves
  • 1/4 tsp Turmeric powder
  • 1 tbsp Chilli powder
  • 1 pinch Asafoetida
  • to taste Salt

Instructions

  • Cut mangoes into small cubes and add salt to it.
    Keep it aside for 20-30 mins
  • Heat oil in a pan and add mustard seeds.
  • Keep the flame low and add fenugreek powder and curry leaves
  • Then add turmeric powder, chilli powder and asafoetida(hing) and saute it lightly in hot oil.
  • Then add the salted mangoes to it and mix well
  • Let the mangoes cook well in the oil
  • Store the pickle in a closed glass jar or container after it cools down

Notes

Keep the flame low while sauting the masala powders in oil.
 Add more gingelly oil if required but do not add water to cook mangoes.
