Easy Pressure cooker Vegetable Biryani

This is a one pot Vegetable Biryani a.k.a Brinj

Equipment

  • Pressure cooker

Ingredients

  • 3 tbsp Cooking Oil
  • 1/2 tsp Fennel seeds
  • 2 pieces Cinnamon stick small
  • 1 nos Bayleaf
  • 5 nos Cardamom
  • 6 nos Cloves
  • 1 nos Onion sliced
  • 1 tbsp Ginger Garlic paste
  • 2 nos Green chillies sliced
  • 2 nos Tomatoes chopped
  • 1/4 cup Mint leaves
  • 1/4 cup Coriander leaves
  • 2 cups Basmati rice washed and soaked for 30 mins
  • 3 cups Water
  • 1 tsp Ghee

Mixed Vegetables – 1 cup

  • Carrots medium cut
  • Beans medium cut
  • Peas
  • Potatoes medium cut
  • Corn

Instructions

  • Heat cooking oil in a pressure cooker base
  • Add fennel seeds, cinnamon sticks, bay leaf, cardamoms and cloves
  • Add sliced onion
  • Saute well
  • Add the ginger garlic paste and mix well
  • Add sliced green chillies
  • Add chopped tomatoes and saute well
  • Add a cup of mixed vegetables
  • Add quarter cup of mint and coriander leaves
  • Add salt to taste, turmeric powder, chilli powder, coriander powder and mix well
  • Add 3 cups of water
  • Add the soaked basmati rice
  • Add a teaspoon of ghee and mix slowly without breaking the rice
  • Pressure cook for 1 whistle on medium
  • Open the cooker after the pressure releases
  • Garnish with coriander leaves, serve with love and share the goodness
